head chef Ben Palmer 

 

Previously from the United Kingdom, he learnt his trade in the Gastro Pubs of Warwickshire. Impressing the local crowds and soon winning awards for his inspiring food while working at the Baraset Barn.

He relocated to Australia to apply his craft to places like Bistro Bruno (Good Food Guide) and then moving on to open the New Hampton at Kings Cross, before arriving to put his stamp on the Baldrock Hotel in 2016.

He believes in local, fresh and seasonal food - refined and not overly complex, letting the produce speak for itself. An advocate for sustainability, Ben works closely with a local farmer in Canowindra to source pasture fed Lamb, Pork and Beef which he uses in the restaurant, so look out for the specials where he looks to utilise the whole animal.
